Tuna Onion Steaks

Ingredients:
  • 2 fresh tuna steaks;
  • 3 cloves of garlic;
  • 1 lemon;
  • 100ml olive oil;
  • 1 onion;
  • 2 peeled tomatoes;
  • 1 red bell pepper;
  • 50ml white wine;
  • Parsley sauce;
  • Mint sauce;
  • 2 sweet potatoes;
  • 1 cinnamon stick;
  • 2 tablespoons vinegar;
  • Cold butter to taste;
  • Salt to taste;
  • Pepper to taste.
Preparation:
  • Peel and cut the sweet potato into small cubes, place in a pan with a drizzle of olive oil and sauté the sweet potato with a little salt and a cinnamon stick. Cover with water and simmer for 10 minutes;
  • Drain the potatoes well, place in a blender jug, add 2 cubes of cold butter, a drizzle of olive oil and blend until smooth. Season with salt, pepper and olive oil;
  • For the onions, cut the onions and peppers into julienne, remove the weeks and the central white area of the peppers. Set aside;
  • Heat a pan with a generous amount of olive oil, add the onion to sauté, seasoned with salt and black bell pepper, then add the peppers, a bay leaf and a sprig of mint. Leave to stew for 10 minutes over a low heat;
  • Add the white wine at the end of the onions;

  • Heat a frying pan with olive oil;
  • Finely chop the garlic. Season the tuna steak with salt and pepper and place in the frying pan with the garlic for one minute on each side;
  • Place the mashed sweet potato on the bottom of the serving plate, with the tuna and onion on top.
