Tuna Tartar, Garum and Chive Oil

Ingredients:

Ingredients for Tartar:
100g tuna in small cubes
2 gherkins, chopped
10 g chopped red onion
1/2 juice and zest of half a lime
10 g of mayonnaise
5 g grated ginger
2 g chopped chives
2 g dill chopped
6 to 8 drops of garum
Dill leaves and seaweed to finish - as needed

Ingredients for Chive Oil:
15 g chives
40 ml of oil
Salt - as needed

Preparation:

Start by making chive oil.
Put the chives, oil and salt in a food processor, grind.
Then strain the oil through a cloth strainer, this process may take a few minutes.

For tartar...
In a bowl, combine all the ingredients and mix gently.
Taste and adjust seasonings, you may need to add more garum or lime depending on the intensity you want.

Lastly…
With the help of a round stainless steel ring, arrange the tartar in a deep dish.
Put chive oil around.
Garnish with dill leaves and seaweed.
